Do you write résumés for jobs in the United States?
Yes. A US résumé is a single page of Letter, leads with a summary and achievements rather than duties, uses American spelling and leaves out the photo and personal details a South African CV would carry. If you are applying across borders we supply a version for each country from the same facts.
How do you handle a gap or a change of career?
By saying what you did with the time, briefly and without apology, and by leading with the skills the new field asks for rather than the job titles of the old one. A short profile at the top can explain the move in two sentences, so the reader is not left to guess.
Will you make things up to fill it out?
